  • 3 Medium vine ripe tomatoes
  • 2 Small cloves of garlic, minced
  • 1/4 cup Chopped red onion
  • 2 Spoon Fresh basil leaves, Chopped
  • 1 Spoon Extra virgin oil
  • 1 Spoon Balsamic vinegar
  • Coarse salt and fresh pepper to taste
  • 3 ounce Partially skimmed mozzarella cheese, Dice (omit the entire 30, ancient)
  • 1.25 lb 8 thinly sliced ​​chicken chops
  • Mix onion, olive oil, balsamic vinegar, 1/4 teaspoon coarse salt and pepper. Set aside a few minutes.

  • Chop the tomatoes and place them in a large bowl. Combine with garlic, basil, onion balsamic vinegar and an extra 1/8 teaspoon of salt and pepper to taste. Set it aside and let it sit for at least 10 minutes or overnight.

  • Pour the cheese when you are ready to serve.
