It’s summer and I don’t know you, but I need some new picnic, barbecue and camping recipes! My husband and I recently went to paddle camping for his birthday (when the kids were camping), and when I was thinking about what food to pack, I crave something new and different. So, I put together a bunch of delicious ingredients to make this hearty, delicious, and easy pasta salad recipe.

I think it’s safe to say that it is one of my favorite pasta salads right now… Eating it by the river will probably make it taste better than usual! Oh, how I like summer activities, especially when they involve water. 🙂

  • 8 ounce Whole wheat pasta, Boil according to package instructions (Macaroni shape or similar shape)
  • 8 ounce Cherry tomatoes, Halved
  • 2 cup Mixed vegetables, (Mixed salad, spinach or arugula), chopped
  • 3/4 cup Cheddar cheese, Cut into small dice (about 4 ounces)
  • 1/2 cup Pitted mediterranean olives, Chopped
  • 1/4 cup Fresh basil, Chopped
  • 1/4 Shallots, Diced
  • 2 ounce Sliced ​​salami, Chopped

Instructions

  1. In a large bowl, whisk together cooked pasta, tomatoes, vegetables, cheese cubes, olives, basil, red onion, and salami.

  2. Mix the spices in a small jar and cover with a tight fitting lid. Shake well to emulsify and mix into the pasta salad until the coating is even. Eat immediately or store in the refrigerator for 3 to 4 days.
